Almond Joy Bars 2

For the Center

  1. 2 1/2 cups shredded coconut
  2. 1 tsp vanilla extract
  3. 3 -4 T 100 % pure maple syrup (depending on desired sweetness)
  4. 3 T unrefined coconut oil, melted

For the Coating

  1. 2/3 cup cocoa powder
  2. 2/3 cup unrefined coconut oil, melted
  3. 1 tsp vanilla extract
  4. 2 T 100% pure maple syrup
  5. Dash of seal salt
  6. 1 raw almond for each candy


  1. Combine coconut, coconut oil, maple, and vanilla in food processor for about 30-45 seconds.
  2. Form small oblong balls with the mixture and place on parchment paper lined plate.
  3. Refrigerate for about 15 minutes to set.
  4. In a small mixing bowl, whisk together cocoa powder, coconut oil, vanilla, salt and maple syrup.
  5. Once coconut pieces have set, dip and coat with chocolate and place back on parchment paper. Press one almond into the top of each piece.
  6. Refrigerate for about 30 minutes and then you are ready to enjoy!


  1. Since coconut oil hardens in the cold, let these sit out for a few minutes before eating to give some time to soften a bit.
